A Champagne That Instantly Stands Out
André Drescher of Caviar House & Prunier sums up the attraction of this champagne by citing his own personal experience: “This is one of only a very few rosé champagnes that I have enjoyed.” He mainly attributes this to its very light color. By way of explanation: it is the skin of grapes that gives them their color, not the flesh. However, the skin also contains bitter compounds. It follows that lighter wines are less bitter; after crushing, the skins remain in contact with the juice for less time. This is the case with this light pink-colored champagne, which is therefore elegant and complex with a moderately strong, fresh flavor. “It has character. You can spend a long time savoring a glass of it, which makes an ideal aperitif,” says the shop manager. What’s more, only the tiniest possible amount of sugar is used to make it. Which is why, as Drescher puts it, “this champagne reflects AR Lenoble’s emphasis on taste instead of on big, frothy bubbles and lots of carbon dioxide.”
